Is it okay if I use frozen chips? Yes. You may skip preparing chips from scratch if you already have ready made oven chips. Prepare the chips according to the package directions, and while they're baking, create the cheese sauce. Use oven chips, chunky, crinkle, curly, french fries, or any other cut of chip you choose. Simply bake or fried them till crisp before spreading the cheese sauce over them.

You may use mature or mild cheddar cheese, depending on your preference. The finest cheese for making a creamy cheese sauce is cheddar.

Use whole milk, skimmed milk, or evaporated milk for your milk To thicken the sauce, you may use plain flour, all purpose flour, or corn flour To prepare the roux, combine equal parts unsalted butter and flour.

Salt, freshly ground black pepper, and garlic powder are the only spices you'll need You'll also need a high smoke point vegetable oil like sunflower, canola, grapeseed, or peanut oil for deep frying Garnish with freshly chopped parsley or leave it out completely. It's all up to you.

How to create your own potato chips

1. There are four images in this collage that illustrate how to prepare potatoes Peel the potatoes and cut them into 12 inch thick long sticks. Alternatively, you may prefer a chip form.

2. Place them in cold water for 5 minutes before rinsing and draining After that, blanch the potatoes for 3-4 minutes in boiling water. Remove it from the water and place it on a clean cloth or paper towel to cool.

3. Place the potatoes in a large mixing dish and toss with corn starch after they have cooled and dried Before cooking, toss aside any extra flour.

4. Heat the vegetable oil to 330°F on medium high and cook the chips for 4-5 minutes. Remove the chicken from the oil and put it aside for 8-10 minutes. You may create the cheese sauce in the meanwhile.

5. Then, increase the temperature of the oil to 350°F and double fry the chips. Fry for a couple of minutes, or till crispy. Remove the chips from the oil and set them on a paper towel.

Option of baking or air frying

Blanch the cut potatoes in hot boiling water for 3-4 minutes and drain the water if you want to bake or air fried the chips. Allow time for the chips to cool and dry.

Toss them in the corn starch, shake off the excess flour, and set them on a tray over the baking sheet Spray the chips with a liberal quantity of vegetable or cooking oil and bake them for 15-20 minutes or until crispy golden brown in a preheated oven/air fryer at 200°C (400°F).
