What is Hoisin Duck, exactly?

In this lesson, I'll show you how to make our own crispy Hoisin duck using duck breast instead of a full duck. Although this is not a typical roasting technique, you will find it to be lot simpler, faster, and tastier than you had anticipated.
We need the following ingredients
Duck breast I use two boneless, skin-on duck breasts. The crispy texture is achieved by using duck skin. You may also use chicken or turkey breast in this dish. Season the duck breasts simply with sea salt and freshly ground black pepper.
Aromatic duck sauce Hoisin sauce is used to prepare the sauce for the flavorful duck wrap. For added flavor, I use dark soy sauce, light soy sauce, sesame oil, ginger, and garlic. To enhance sweetness, use sugar or honey. In this recipe, I used Lee Kum Kee hoisin sauce, but you may use whatever hoisin sauce brand you have on hand.
Pancakes from China Mandrin pancakes are thin wheat pancakes that are perfect for serving with hoisin duck. Steam, microwave, or pan fry the pancakes to soften them. It's available at Chinese grocery shops and frozen sections of supermarkets Cucumbers, shredded carrots, cabbage, lettuce, and spring onions, thinly sliced, are great for duck wraps.
What is the best way to make crispy duck breast?
Dry the duck breasts and gently score them. If any feathers are attached, carefully wipe them off with a kitchen towel or cloth before scoring. Both sides should be seasoned with sea salt and freshly ground black pepper. Preheat the oven to 200°C (400°F/ Gas 6) before searing the duck.

Flip and seal the meat side for 1 minute when the skin begins to turn crispy golden. Save the duck fat to use in other recipes later.
Then, skin-side down, put to a baking pan and bake for 6-10 minutes, depending on your choice for doneness. Halfway through, flip the page. Rare to medium rare takes around 5-6 minutes.
