1. Season the chicken breasts with salt and pepper


Perfectly cooked crispy chicken cutlets are the foundation of this delectable katsu burger. Flatten the chicken breast with a meat tenderizer hammer or rolling pin after slicing it in half lengthwise. Also, cut each cutlet in half to produce four pieces. On both sides of the cutlets, season with salt and freshly ground black pepper.


2. Coating for Chicken


Katsu chicken is traditionally topped with eggs, flour and Japanese bread crumbs. Combine eggs, flour mixture and pancake bread in three separate bowls or trays. Beat two eggs together in a medium mixing bowl. Combine whole wheat flour, corn starch and baking soda in a large mixing bowl. In a large serving dish or tray, place the bread. Sprinkle the chopped chicken pieces in the flour mixture, then whisk in the egg and repeat. Then cover with bread crumbs and set aside.


3. Deep Fried Food


Deep fry the breaded chicken pieces until all sides are crispy golden brown. To avoid the crust from burning too soon, keep the oil temperature between 300° and 325° F. Deep frying should be done using a neutral-flavored oil such as sunflower, canola, peanut, or vegetable oil. To preserve the crispy coating texture, place the fried chicken cutlets on a wire rack instead.


Is it possible to bake it? If you want to bake the chicken in the oven, spritz or brush both sides of the covered chicken pieces and lay them on a wire rack. Preheat oven to 320°F and bake for 20-25 minutes, or until golden brown and crispy. Halfway through, flip in.


4. Katsu Burger Buns Assembled In this recipe, I used toasted brioche buns, but you may use any of your favorite burger buns. Brush a toasted brioche bread with melted butter to make it toastier. Toast for 2-3 minutes in a 350°F preheated oven until slightly crunchy. You may either toast the entire bread or just the sliced side up.
